Pizza Night

Sometimes I fancy myself a chef (othertimes I'm a wiz at ordering Chinese). Mondays tend to be my cooking day. This past Monday I decided it was time for some homemade pizza. I mean who doesn't love pizza?

I made three pizzas (was gonna make four, but one crust died a sad, sad death) : mozzarella, basil and tomato; chicken and bacon; and meat lovers.

1. Mozzarella, basil and tomato - must use "real mozzarella" yep gotta go to the nice cheese section. Don't even think about using Kraft block cheese here! This pizza is a classic and will please any picky eater. I recommend drizzling balsamic over the finished product!

2. Chicken and bacon - mmmmmmmm. I used a nice seasoned chicken with red peppers and topped with sauteed onions and garlic. For all of these I used a "homemade sauce." This consisted of pouring a can of sauce in a pot, adding herbs and spices and calling it my own. (I'm more of a use what's in the pantry, rather than follow an exact recipe kinda lady.) Delicious pizza, cook all meat ahead of time.

3. Meat lovers - most intense pizza of the night. Let's see...we had : sweet Italian sausage, bacon, pepperoni, ham, bacon, two different layers of cheese and mushrooms. This was a real mac daddy. Papa John's ain't got nothin' on this meat lovers. But seriously it was great.

Making three pizzas was a serious undertaking. I recommend buying your crust. I made mine and it's a lot of work for nothing that special (I've made it a million times, why do I keep doing this to myself?). I also recommend using a pizza stone...my dead crust came because I was impatient and didn't want to wait for the stone. Use an ice cube to cool it down between pizzas. Takes about five minutes. Again patience... Best part about making three pizzas...BREAKFAST PIZZA! Don't let anyone tell you you can't have pizza for breakfast, because they are wrong and shouldn't be your friend.

OK I'm hungry now. Time for some leftover pizza.
